This chapter describes photosynthesis in plants as a mechanism for putting energy into food chains. This chapter also presents the impact of excess light, producing photo-oxidative stress in plants, resulting in the generation of toxic forms of oxygen. The defense strategy and mechanisms followed by plants to cope with excess light and the role of the xanthophylls cycle carotenoids in the regulation of photosynthesis are also investigated.
